Ingredients:
- Chicken – 700 g (cut into thin cubes)
- Chicken Stock Cubes – 2
- Large Onions – 2
- Green Chillies – 5 (chopped lengthwise)
- Garlic – 5 cloves (cut into long thin strips)
- Oil – 3 tbsp
- Butter – 2 tbsp
- Curry Masala Powder – 2 tsp
- Water – 1 cup
- Red Chilli Powder – 1 tsb
- Tomato – 1 (thinly slices)
- Tomato Sauce – 2 tsp
- Lemon Juice – 1
- Coriander Leaves – 2 tbsps (chopped)
- Salt (according to taste)
Method:
- Heat oil in a wok.
- Stir-fry chicken until it is sealed.
- Remove from oil and put in a pan.
- In a wok, heat the butter and fry the garlic, ginger and red chilli powder for 1 min.
- Add onions and fry till well browned.
- Add 1 tsp. of the curry powder masala and stir well.
- Add the chicken pieces and salt and sauce for 10 mins.
- Add the fried onions, stock cubes and water to the chicken.
- Mix well. Cook till done and dry.
- Add the green chillies, tomato slices and the remaining curry masala powder and sauce for 3 mins.
- Serve garnished with coriander and a squeeze of lemon juice.
