Ingredients:
- 2 cups Chicken Salad
- 1 teaspoon chopped Jalapeno Pepper
- 4 (10 inch) Flour Tortillas
- 1/3 cup Guacamole
- 8 slices American Cheese
- 4 Lettuce Leaves
- 1/2 cup diced, seeded Tomato
- 1 cup Salsa
Preparation:
- Add chicken salad and jalapeno pepper to medium bowl.
- Spread guacamole on tortillas.
- Top guacamole with two slices of cheese and lettuce.
- Spoon chicken salad over lettuce.
- Sprinkle with diced tomato.
- Roll tortillas up, and slice crosswise diagonally.
Note:
- Remove the seeds of Jalapeno pepper. Substitute serrano or habanero peppers if necessary or desired.
- Homemade salsa makes this sandwich all the more refreshing.
