Coffee Cake

Ingredients:

  • 3/4 cup sugar
  • 1/2 cup butter (softened)
  • 1 egg (slightly beaten)
  • 1 cup fresh buttermilk
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8″ x 8″ square baking dish and medium mixing bowls

Sugar Topping:

  • 1/2 cup sugar
  • 3/4 teaspoon cinnamon

Instructions:

  1. Preheat oven to 375 degrees.
  2. In a medium mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Break an egg and beat slightly. Beat into the butter and sugar mixture.
  4. Slowly add in 1 cup of fresh buttermilk and mix well with a whisk. Set aside.
  5. In a separate mixing bowl, measure the flour, baking powder, baking soda, and salt into a fine sieve and sift all into the mixing bowl.
  6. Stir the dry ingredients into the wet and mix until well combined. The batter will be thick.
  7. Butter the baking dish well and spread the batter evenly. In a small dish, mix the sugar and cinnamon together.
  8. Sprinkle liberally on top of the batter.
